Lactose and Casein Intolerance: Why Churned Ghee is Safe

The Dairy Dilemma

A common misconception is that if you are lactose or casein intolerant, you must strictly avoid ghee. In reality, authentic, properly clarified ghee is generally celebrated as a safe, hypoallergenic fat for almost everyone with dairy sensitivities.

What is Lactose and Casein?

  • Lactose is the natural sugar found in milk.
  • Casein and Whey are the primary proteins found in milk.
  • When people react negatively to dairy, it is almost always due to an inability to digest these specific sugars or proteins.

    The Magic of Clarification

    When we make ghee using the traditional Bilona method, two major transformations occur:

  • Fermentation: We first turn the milk into curd. The probiotic bacteria consume much of the lactose sugar during this culturing process.
  • Separation & Boiling: The butter is then churned and slowly boiled. As the water evaporates, the milk proteins (casein and whey) and remaining sugars curdle, sink to the bottom, and caramelize.
  • The pure, golden liquid fat is then painstakingly strained through fine mesh. The resulting product is virtually 100% pure butterfat, completely devoid of the problematic lactose sugars and casein proteins.

    Note: While ghee is safe for intolerances, individuals with severe, life-threatening dairy allergies (anaphylaxis) should consult their doctor before introducing any dairy derivative.
